Mayonnaise Biscuits and Simple Cake Balls

Well I was determined not to blog again until I got my tree up and well, close enough. Still have some ornaments to add. But for the most part, it's done. *dusting hands off* And it's pretty girly. Also sorry I lopped off the top and bottom but maybe it's for the best. I still need a decent star for the top and the bottom looks empty because I haven't bought presents yet.




So as promised, I wanted to share with you two fun recipes that I tried recently. The first is called Mayonnaise Drop Biscuits. Biscuits can be a pain to make and everyone and their brother has a recipe that they swear is THE ONE. Especially southerners. Personally, as long as the biscuit tastes light and fluffy to me, I don't really care about your method. I found this biscuit recipe recently and it has only three ingredients. What what! Um yes please. My mom of course said "yeah that recipe has been around forever." I had never heard of it, but I'm a fan!

 Here you go:
Ingredients:
2 cups self-rising flour
1 cup milk
6 tablespoons Duke's mayonnaise
Directions:
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, stir together flour, milk, and mayonnaise until just blended. Drop by spoonfuls onto lightly greased baking sheets.
My notes: If you are a mayonnaise hater, I promise you can't taste the mayonnaise. It just tastes like a warm fluffy biscuit. Also, If you like your biscuits to be a little on the sweeter side, drop a tsp of sugar in this recipe. I eventually added honey and butter - duh -  to mine, so not necessary.


The next recipe is easy Cake Balls. Cake Balls intimidate me and I have heard horror stories from people who have tried to make them. If you are a cake ball master then I bow to you. For the rest of us who don't really care how they look and just want a yummy cake ball - try this method below. Note: This calls for a cake box method. If you prefer to be all Martha and make your own, go for it. Maybe someday I will but for now, me and Betty Crocker are pretty tight.

Ingredients:
  • Cake mix (any flavor)+ingredients to bake the cake
  • 1 tub of icing (any flavor)
  • White Chocolate baking squares (we used Bakers, 2 boxes covered only the tops of the balls)
  • Fun sprinkles

Directions:
  • Cook the cake as per directions on the back
  • Let cake cool to room temperature (about 30 minutes)
  • Crumple up the cake in a large mixing bowl
  • Mix in the entire tub of icing
  • Scoop out 1 tablespoon of cake mix and form balls\
  • Place the balls in the freezer for (10 minutes) 
  • Melt the white chocolate baking squares as per directions on the box 
  • Drizzle on the chocolate
  • Add festive sprinkles
  • Place cake balls in the freezer for 10 minutes
  •  Enjoy!
    My notes: After you mix the cake ball batter together with the icing, put it in the refrigerator and let cool for about 20-30 minutes. The first time I made this, I did not do that and the balls did not stick together (sticky balls heh) very well. When they are colder they are SO much easier to mold together.
